Festive sweet potato hash with aromatic spices for a cozy, fragrant home.
Ingredients:
  • 2 pounds sweet potatoes
  • 0.25 cup unsalted butter, melted
  • 3 eggs
  • 1.5 cups white sugar
  • 1 (12 fluid ounce) can evaporated milk
  • 1 cup whole milk
  • 0.75 teaspoon ground cinnamon
  • 0.5 teaspoon ground allspice
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground cloves
  • 1.5 teaspoons vanilla extract
  • 10 large marshmallows
Instructions:
  • Preheat your oven to 375°F (190°C) and lightly grease a 2 quart baking dish.
  • Peel and grate sweet potatoes, then combine with melted butter in a large bowl. In a separate bowl, whisk together eggs and sugar until fully incorporated. Pour over the sweet potato mixture, then add evaporated milk, whole milk, cinnamon, allspice, nutmeg, cloves, and vanilla extract. Mix thoroughly, then transfer to the prepared baking dish.
  • Place in the preheated oven for 60-70 minutes until the sweet potatoes are tender and the top is lightly browned. Add marshmallows on top of the sweet potatoes and bake for an additional 5-10 minutes until the marshmallows are lightly browned. Rest for 5 minutes before serving.
