Crispy sweet potato hash browns made with grated sweet potatoes fried in butter - a crowd-pleasing breakfast dish!
Ingredients:
  • 1/2 pound sweet potato (about half a large sweet potato), peeled and grated through the large grates of a box grater
  • 4 Tbsp butter
  • Salt
  • Pepper
Instructions:
  • Melt 2 tablespoons of butter in a sturdy pan on medium-high heat until it starts to bubble, ensuring it doesn't brown or burn before adding the sweet potato. Use a cast iron pan or a thick-bottomed skillet.
  • Sauté the grated sweet potatoes in batches with butter, shaping them into mounds in the pan. Press gently to flatten slightly and season with salt and pepper. Skip the salt if using salted butter.
  • Pan-fry the hash browns until golden brown on both sides, about 4 to 5 minutes per side, using a metal spatula to flip them.
  • To keep the hash browns warm until serving, transfer them to a preheated oven on a baking sheet. Serve with crispy fried eggs and sizzling bacon!
