Easy potato pancakes with hash browns and sweet grated carrots, topped with applesauce or sour cream.
Ingredients:
  • 1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
  • 0.33333334326744 cup shredded carrot
  • 0.25 cup finely chopped onion
  • 1 tablespoon all-purpose flour
  • 2 large eggs, slightly beaten
  • 1 tablespoon vegetable oil
Instructions:
  • In a big bowl, combine hash browns, carrot, onion, flour, and salt. Mix in the beaten eggs.
  • Warm up a generous amount of oil in a large nonstick skillet over medium heat.
  • Gently place four 1/4 cup potato pancakes in the skillet and press them down slightly. Cook until golden brown, about 2 to 3 minutes per side. Repeat with the rest of the mixture, adding more oil to the skillet if necessary. Let the pancakes drain on a paper towel.
