Ingredients:
  • 1 cup peeled and cubed sweet potato
  • 0.5 teaspoon coconut oil, melted
  • 1.5 teaspoons chopped fresh rosemary
  • 1.5 teaspoons chopped fresh thyme
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfectly heated cooking environment.
  • In a bowl, coat sweet potato cubes with coconut oil using your hands. Spread on a baking sheet and season with rosemary, thyme, salt, and pepper.
  • Roast the potatoes in the preheated oven until tender, approximately 20 minutes.
