Chicken, mustard, watercress and roasted capsicum sandwich

Whip up this iconic lunch box favorite in just 5 minutes!
Ingredients:
  • 20.00 ml natural yoghurt
  • 2.95 gm wholegrain mustard
  • 50g cooked lean chicken breast, shredded
  • 2 slices wholemeal bread
  • 1/4 Lebanese cucumber, sliced
  • 40g roasted red capsicum strips in water
  • 10g picked watercress sprigs or baby rocket
Instructions:
  • In a small bowl, mix together yogurt and mustard. Add chicken and coat evenly by tossing.
  • Layer a slice of bread with the delicious chicken mixture, crisp cucumber, flavorful capsicum, and fresh watercress or rocket. Top it off with another slice of bread to create a satisfying sandwich.
