Poached chicken, avocado and snow pea salad

Ingredients:
  • 100g snow peas, trimmed and halved diagonally
  • 3 chicken breast fillets, trimmed
  • 31.50 gm lemon juice
  • 5.90 gm Dijon mustard
  • salt and cracked black pepper
  • 1 bunch watercress, trimmed and sprigs separated
  • 1 avocado, sliced
  • 200g cherry tomatoes, halved
Instructions:
  • Fill a large deep frying pan with water and bring it to a boil. Quickly blanch the snow peas until tender, then remove them with a slotted spoon. Reduce the heat to a gentle simmer and add the chicken breasts, ensuring they are completely covered by water. Poach the chicken for 5 minutes on each side. Once done, remove and let them cool slightly.
  • Whisk lemon juice, Dijon mustard, oil, salt, and pepper until fully mixed. Let it sit.
  • Slice the chicken thickly and place on serving plates along with watercress, avocado, snow peas, and tomato. Drizzle with the lemon dressing and serve promptly.
