Mexican-inspired sweet potato hash with black beans, corn, and spices - perfect as a side or main dish.
Ingredients:
  • 4 tablespoons olive oil, or more as needed
  • 2 medium sweet potatoes, diced
  • 3 medium carrots, diced
  • 1 medium red bell pepper, diced
  • 0.5 medium sweet onion, diced
  • 1 clove garlic, minced
  • 1 cup canned black beans
  • 1 cup frozen corn, thawed
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground dried chipotle pepper
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
Instructions:
  • In a skillet over medium heat, warm up 4 tablespoons of olive oil. Add sweet potatoes, carrots, bell pepper, and onion. Cook until tender, stirring occasionally, for around 20 minutes. Mix in garlic and cook for an additional 5 minutes until vegetables develop golden brown edges.
  • Combine black beans, corn, cinnamon, chipotle pepper, paprika, and cumin in the skillet. Mix well and lower the heat to medium-low. If needed, drizzle another tablespoon of olive oil to avoid dryness. Simmer for an additional 5 minutes before serving.
