Delicious vegetarian quesadillas with sweet potatoes, black beans, and Cheddar cheese for everyone to enjoy.
Ingredients:
  • 1 large sweet potato, peeled and diced
  • 1 teaspoon chopped fresh cilantro
  • 0.25 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.25 cup frozen corn
  • 1 (19 ounce) can black beans, drained and rinsed
  • 8 (8 inch) flour tortillas
  • 1 cup shredded Cheddar cheese
  • cooking spray
Instructions:
  • In a large pot, simmer sweet potatoes in salted water until very tender, about 15 minutes. Drain and transfer to a bowl. Mash sweet potatoes and stir in cilantro, chili powder, and salt.
  • Microwave the corn in a bowl until warmed, for about 1 to 2 minutes.
  • Spread a layer of sweet potato mixture on a tortilla, then add black beans and corn on top. Sprinkle Cheddar cheese over the corn and cover with another tortilla. Repeat with remaining tortillas and fillings.
  • Heat a frying pan over medium heat, coated with cooking spray. Cook each quesadilla for 3 to 4 minutes per side until the cheese is melty and the beans are warmed. Slice into quarters before serving.
