Spiced sweet potato wedges

Irresistible golden roasted sweet potato wedges, the perfect barbecue side.
Ingredients:
  • 54.60 gm olive oil
  • 1.80 gm salt
  • 1/4 tsp freshly ground black pepper
  • Ground cayenne pepper, a pinch
  • 900g sweet potato
Instructions:
  • Preheat the oven to 220C and place a large baking tray in the lower third of the oven to heat for 10 minutes.
  • In a large bowl, mix oil, salt, black pepper, and cayenne pepper. Cut sweet potatoes lengthwise into 2-2.5cm wedges. As you cut, coat the wedges in the seasoned oil to keep them fresh. Place the potatoes cut-side down in a single layer on the baking tray, with the largest ones in the corners for intense heat.
  • Roast in the lower oven rack for 20 mins until potatoes are golden brown on the bottom. Use a metal spatula to flip the potatoes, moving darker wedges to the center and lighter ones to the edges. Roast for another 5 mins until golden brown and soft in the center.
