Vegetable wedges with spiced sour cream

Spice up oven-baked potato wedges with coriander, paprika, and sweet potato. Pair with a cool sour cream dip.
Ingredients:
  • 500g sebago potatoes, cut into wedges
  • 500g orange sweet potato, cut into wedges
  • 4 carrots, cut into wedges
  • 1 tsp ground coriander
  • 2.50 gm sweet smoked paprika
  • 117.50 gm extra-light sour cream
  • 82.50 ml plain low-fat yoghurt
  • 1 tsp chilli flakes
  • 2 tsp finely grated lemon rind
Instructions:
  • 1. Preheat your oven to 200°C/180°C fan-forced. Place potatoes and carrots in a saucepan, cover with cold water, and bring to a boil over high heat. Cook partially covered for about 10 minutes until almost tender, then drain.
  • Mix together potatoes, carrots, oil, coriander, and paprika in a baking dish until evenly coated. Roast in the oven for 45 minutes or until golden brown.
  • Prepare the spiced sour cream by combining the ingredients in a bowl. Serve the wedges with the spiced sour cream.
