Grilled vegetable wedges with zesty lime sauce for a delightful summer meal.
Ingredients:
  • 1kg Red Delight potatoes, cut into wedges
  • 800g sweet potato (kumara), peeled, cut into wedges
  • 36.40 gm olive oil
  • 5.00 gm paprika
  • Olive oil spray lime cream
  • 125ml (1/2 cup) whole-egg mayonnaise
  • 125ml (1/2 cup) sour cream
  • 1 garlic clove, crushed
  • 1 tsp finely grated lime rind
  • 1.30 gm red Tabasco pepper sauce
Instructions:
  • Prepare the zesty lime cream by mixing together mayonnaise, sour cream, garlic, lime zest, and Tabasco in a bowl. Season with salt and pepper, then chill in the fridge until needed.
  • Boil the potato and sweet potato in separate saucepans for 6-8 minutes until just tender. Drain and let cool for 20 minutes. Transfer to a large bowl, drizzle with oil, sprinkle with paprika, add salt and pepper, and toss well to combine.
  • 1. Preheat a barbecue grill or chargrill on high heat. Spray the potato and sweet potato wedges with oil and cook for 8 minutes, turning occasionally, until charred and tender. Transfer the cooked wedges to a serving platter and serve with lime cream.
