Mexican steak with sweet potato wedges and bean salad

Transform a rump steak into a flavorful fiesta with zesty Mexican spices, perfect for a family feast!
Ingredients:
  • 800g small sweet potato
  • 30g packet taco spice mix
  • 280g jar Brand Mixed Chargrilled Peppers, drained reserving oil
  • 1 tsp grated lime rind
  • 1.2kg Beef Rump Steak
  • 375g green beans, halved
  • 400g can Brand Red Kidney Beans, rinsed, drained
  • 200g Perino tomatoes, halved
  • 1/2 small red onion, sliced thinly
  • Olive oil or vegetable oil, to top up
  • 65.63 gm lime juice
  • 125.00 ml coriander leaves
  • 176.25 gm sour cream
Instructions:
  • Preheat your oven to 220C (200C fan-forced) and line a baking tray with baking paper. Wash the sweet potato thoroughly, pat it dry, then cut it into wedges lengthways, keeping the skin on. In a large bowl, toss the sweet potato with 2 tsp of the spice mix and 2 tbsp of reserved oil until well coated. Place them in a single layer on the prepared tray and season with salt. Bake for 30-40 minutes until the sweet potatoes are tender and nicely browned.
  • In a small bowl, mix together the remaining spice mix, lime rind, and 2 tablespoons of reserved oil. Use this flavorful mixture to coat the steak generously.
  • Heat up your barbecue grill or chargrill on high.
  • Blanch green beans in boiling water for 1 minute, then transfer to a bowl of ice water to cool quickly. Drain thoroughly. In a large bowl, mix together green beans, kidney beans, tomato, onion, and peppers. In a measuring jug, combine reserved oil with vegetable or olive oil to make 1/4 cup. Add lime juice, season, and pour the dressing over the bean mixture. Mix well to combine.
  • Season the steak generously then grill for 2 minutes on each side until it reaches your preferred level of doneness. Place the cooked steak on a plate, cover it with foil, and let it rest for 5 minutes. Slice the steak and add coriander to the salad, then season to taste.
  • Serve sliced steak alongside its juices, with a side of wedges, sour cream, and salad.
