Ingredients:
  • 700g beef rump steak, trimmed, cut into strips
  • 44.00 gm sweet chilli sauce
  • 12 x 20cm flour fajitas or tortillas
  • 375.00 ml grated tasty cheese
  • 1 baby cos lettuce, shredded
  • sour cream, to serve
  • 250g grape tomatoes or cherry tomatoes, quartered
  • 2 green onions, trimmed, finely sliced
  • 1 large avocado, peeled, stone removed, diced
  • 10.60 gm lime juice
Instructions:
  • Prepare a flavorful avocado and tomato salsa by combining tomatoes, onions, avocado, and lime juice in a glass or ceramic bowl. Season with salt and pepper, then gently toss to blend all the flavors. Cover and let sit aside.
  • In a bowl, combine steak, oil, sweet chilli sauce, salt, and pepper. Toss together until fully mixed.
  • Preheat a large non-stick frying pan over high heat. Add the steak mixture and cook, stirring, for 2 to 3 minutes until browned and cooked through. Transfer to a heatproof bowl and cover to keep warm.
  • Heat fajitas or tortillas according to the package instructions.
  • Set up a fajita bar with salsa and steak, cheese, lettuce, and sour cream in individual bowls, and fajitas on plates for assembling at the table.
