Grilled fajitas with marinated skirt steak, shrimp, peppers, and onions for a flavorful and effortless meal.
Ingredients:
  • 1 large onion
  • 1 (20 ounce) package pre-seasoned fajita skirt steak (such as Eddy Carls)
  • 0.5 pound large shrimp, peeled and deveined
  • 1 medium red bell pepper, quartered
  • 1 medium green bell pepper, quartered
  • 1 (8 ounce) package 6-inch flour tortillas
Instructions:
  • Heat up your outdoor grill until it reaches medium-high heat, then lightly oil the grate.
  • Place the skirt steak on the hot grill and sear each side for 3 minutes. Let the steak rest for 10 minutes after grilling. Skewer the shrimp and grill for 1 minute per side, then take them off the grill.
  • Slice the onion into thick 1/2-inch layers, keeping them intact. Grill the onion layers and bell peppers until slightly charred, for about 2 minutes on each side. Roughly chop the grilled onions and peppers. Warm the tortillas wrapped in foil on the grill for about 3 minutes.
  • Slice the steak into succulent strips, and delicately remove the shrimp from the skewers. Craft vibrant fajitas by layering the steak, shrimp, onions, and bell peppers together.
