Impressive and easy steak pinwheels: Flank steak filled with spinach, feta, and baked to perfection.
Ingredients:
  • 0.25 cup olive oil
  • 0.25 cup soy sauce
  • 0.25 cup red wine
  • 0.25 cup Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon ground black pepper
  • 1 (1 1/2-pound) flank steak, pounded to 1/2 inch thickness
  • 1 clove garlic, crushed
  • 0.25 cup chopped onion
  • 0.25 cup fine dry bread crumbs
  • 1 cup frozen chopped spinach, thawed and squeezed dry
  • 0.5 cup crumbled feta cheese
Instructions:
  • Create a flavorful steak marinade by blending oil, soy sauce, wine, Worcestershire sauce, Dijon mustard, lemon juice, garlic, Italian seasoning, and pepper in a resealable bag. Massage the bag to combine the ingredients evenly.
  • Using a knife, gently pierce the flank steak to create small slits about 1 inch apart. Place the steak in a resealable bag, add the marinade, remove any excess air, and seal the bag tight. Refrigerate and let it marinate for 8 hours to overnight.
  • Preheat the oven to 350°F (175°C) when you're ready to start cooking.
  • Prepare the filling: Spread crushed garlic on a cutting board, sprinkle with salt, and use the flat side of a knife to form into a paste.
  • Take out the steak from the marinade and gently shake off any extra. Dispose of the leftover marinade. Lay the steak on a clean surface and evenly spread the garlic paste. Top with onion, bread crumbs, spinach, and feta. Roll the steak tightly around the filling, starting from one end; use kitchen twine or toothpicks to secure it. Place the stuffed steak in a shallow glass baking dish.
  • Bake in the preheated oven until the roll reaches an internal temperature of at least 145°F (63°C) in the center, about 1 hour.
  • Allow the dish to cool for 5 minutes to let the filling set before cutting into 1-inch slices to serve.
