Indulge in savory steak fajitas with flavorful guacamole for a delightful Saturday night dinner.
Ingredients:
  • 2 tsp dried oregano
  • 5.00 gm ground cumin
  • 2.50 gm paprika
  • 42.00 gm lime juice, plus lime wedges to serve
  • 400g beef rump steak, trimmed, cut into 1cm strips
  • 1 red capsicum, cut into strips
  • 2 red onions, sliced
  • 125.00 ml chopped coriander
  • 8 flour tortillas
  • 120g sour cream
  • 1 red onion, finely chopped
  • Juice of 2 large limes
  • 2 avocados
  • 1-2 green chillies, seeds removed, chopped
Instructions:
  • In a bowl, mix together the onion and lime juice, and let it marinate for 30 minutes. Right before serving, blend the onion mixture in a food processor with avocado, cumin, coriander, and chili until a chunky puree forms. Season generously.
  • Mix together the cumin, paprika, oregano, lime juice, 1 tablespoon of oil, salt, and pepper in a bowl.
  • Place the steak in the marinade and let it sit at room temperature for up to 15 minutes to infuse flavors.
  • In a large frypan over medium-high heat, sauté the capsicum and onion in the remaining tablespoon of oil until softened, about 2-3 minutes.
  • Transfer the steak to a plate and cover to keep warm. Cook steak in two batches in the same pan for 2-3 minutes per side until browned and cooked to your liking.
  • Take the pan off the heat, then add the vegetables back in and mix in the coriander.
  • Stuff the tortillas with the delicious steak filling, generously dollop with sour cream and guacamole, and present with lime wedges for a burst of citrus flavor.
