Enjoy a delicious and satisfying family dinner with our flavorful steak fajitas!
Ingredients:
  • 8 flour tortillas
  • 500g beef rump steak, thinly sliced across the grain
  • 1 medium brown onion, halved, thinly sliced
  • 1 medium green capsicum, halved, deseeded, thinly sliced
  • 45.20 gm barbecue sauce
  • 5.00 gm Mexican mild spice powder
  • 80g (1 cup) coarsely grated cheddar
  • 1 ripe avocado, halved, stone removed, peeled, thinly sliced
  • Tomato & corn salsa
  • 2 corn cobs, husks and silks removed
  • 2 ripe tomatoes, finely chopped
  • Salt & freshly ground black pepper
Instructions:
  • Boil the corn in salted water for 5 minutes until tender. Refresh in cold water, then cut and remove kernels from cobs using a sharp knife. Transfer kernels to a bowl.
  • Combine the tomato with the corn, gently toss, then season with salt and pepper to taste. Set aside for later use.
  • Preheat your oven to 160°C. Wrap the tortillas in foil and heat in the oven for about 10 minutes until warm. Remove from oven.
  • Heat oil in a large frying pan over high heat. Sear beef for 2-3 minutes until browned. Transfer to a heatproof bowl. Saute onion and capsicum for 5 minutes until onion softens. Return beef to the pan, add barbecue sauce and Mexican spice powder, stir for 1 minute until heated through. Remove from heat and set aside.
  • Set out the beef mixture, cheese, and salsa in individual bowls. Arrange the tortillas and avocado on plates for serving. Encourage children to create and wrap their own fajitas to their liking.
