Delicious lime and garlic marinated steak fajitas with Old El Paso™ seasoning, served with grilled peppers and onions. Marinate flank steak up to 10 hours in advance for an easy, flavorful meal. Ready in minutes and only 330 calories per serving - a restaurant-quality dish at a great value!
Ingredients:
  • 1 1/3 lb beef flank steak, trimmed of visible fat
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1 tablespoon packed brown sugar
  • 1 tablespoon finely chopped garlic
  • 1/4 teaspoon ground red pepper (cayenne)
  • 1/4 cup lime juice
  • 2 large red or yellow bell peppers, cut into 1/4-inch strips (about 3 cups)
  • 1 cup sliced onions
  • 1 tablespoon vegetable oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 6 tortillas from 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • Chopped fresh cilantro leaves, sliced green onions, avocado slices, sour cream and lime slices, as desired
Instructions:
  • Marinate the beef by placing it in a large resealable plastic bag. In a small bowl, combine taco seasoning mix, brown sugar, garlic, ground red pepper, and lime juice. Pour the marinade over the beef in the bag, seal it, refrigerate, and let it marinate for 8 to 10 hours.
  • Combine bell peppers, onions, oil, cumin, coriander, and salt in a medium bowl; let flavors meld together while you prepare the rest of the dish.
  • Prepare a 12- to 13-inch round grill pan by spraying it with cooking spray, then heat it over medium-high heat. Take the beef out of the marinade and place it in the pan, discarding any leftover marinade. Cook for 10 to 20 minutes, flipping it once, until an instant-read thermometer inserted into the thickest part of the steak reads 135°F (for medium doneness). Move the steak to a cutting board, cover it loosely with foil, and allow it to rest for 5 minutes before slicing.
  • Utilize a grill pan to sauté the pepper and onion blend for 5 to 7 minutes, stirring occasionally, until the veggies are tender yet slightly charred and golden.
  • Slice the steak thinly at an angle against the grain. Arrange the beef and vegetables in the center of heated tortillas. Sprinkle with the remaining toppings before serving.
