Indulgent prawn rice dish that will have you craving more rice even though prawns steal the show.
Ingredients:
  • 750g medium green prawns, peeled (tails intact), deveined
  • 2 garlic cloves, crushed, finely grated
  • 72.80 gm extra virgin olive oil
  • 1 bunch English spinach, trimmed, leaves roughly chopped (see Notes)
  • 800.00 gm white long-grain rice, cooked, cold
  • 1/2 x 250g punnet cherry tomatoes, sliced
  • Coriander leaves, to serve
  • Lime wedges, to serve
  • 65.63 gm lime juice
  • 2 garlic cloves, crushed
  • 82.50 ml fresh coriander, finely chopped
  • 2.25 gm white sugar
  • 2.40 gm salt
Instructions:
  • Prepare Lime Dressing: In a screw-top jar, combine all ingredients with a pinch of ground black pepper. Seal the lid tightly and shake vigorously until the salt dissolves and the mixture is well combined.
  • In a glass or ceramic bowl, combine prawns, garlic, lime rind, and oil. Gently toss to coat, then cover and refrigerate for 10 minutes.
  • In a food processor, blend 5 tablespoons of dressing with spinach into a smooth puree. If needed, add 1 tablespoon of water to help with the process. Transfer the mixture to a large bowl, then add rice. Mix everything together well. Finish by topping with tomato.
  • Preheat a spacious non-stick pan over high heat. Sear prawns in two batches for 1 minute per side until they are just cooked through and have a golden hue. Transfer prawns to a plate.
  • Drizzle prawns with the remaining dressing, scatter with fresh coriander leaves, and serve alongside green rice and lime wedges.
