Sauté broccolini to keep it nutritious, pair with tangy lemon-lime garlic marinated chicken tenderloins for a flavor-packed meal.
Ingredients:
  • 2 tsp lemon rind, finely grated
  • 1 tsp lime rind, finely grated
  • 31.50 gm lemon juice
  • 3 garlic cloves, crushed
  • 13.80 gm extra virgin olive oil
  • 8 large (about 500g) chicken tenderloins
  • 1 red onion, finely chopped
  • 2 sticks celery, thinly sliced
  • 2 bunches broccolini, trimmed, cut into 5cm lengths
  • 400g can chickpeas, rinsed, drained
  • 40.00 gm water
  • 100g baby kale leaves
  • 40g creamy feta, crumbled
  • Lemon zest, to serve
Instructions:
  • In a shallow dish, mix together lemon and lime rind, juice, 1 garlic clove, and 2 tsp oil. Add chicken, ensuring it's coated well. Cover and refrigerate for 30 minutes to marinate.
  • Preheat a chargrill over medium-high heat, then grill the chicken for about 2 minutes on each side until it's perfectly charred and cooked through.
  • Heat the rest of the oil in a large saucepan over medium heat. Saute onion and celery for 5 minutes. Then, add the rest of the garlic and cook for 30 seconds. Add broccolini, chickpeas, and water. Cover and cook, stirring occasionally, for about 2 minutes until broccolini is tender-crisp. Lastly, fold in the baby kale and cook for 1-2 minutes until just wilted.
  • Divide the flavorful chickpea mixture among plates, top it with succulent chicken, and finish it off with a generous sprinkle of tangy feta and bright zest.
