Try this zesty roast chicken with citrus and garlic for a flavorful twist on a classic dish.
Ingredients:
  • 1.4kg whole chicken
  • 80ml (1/3 cup) olive oil
  • 2 lemons, cut into wedges
  • 2 limes, cut into wedges
  • 1 garlic clove, peeled
  • 3 red onions, cut into thin wedges
  • 2 red capsicums, halved, deseeded, cut into thick strips
  • 3 sprigs fresh oregano
Instructions:
  • Preheat your oven to 200°C. Line a roasting pan with non-stick baking paper. Arrange the chicken in the pan, brush with 1 tablespoon of oil, and squeeze the juice of 1 lemon wedge followed by 1 lime wedge over the chicken.
  • Gently smash the garlic and massage it onto the chicken, then tuck it inside the cavity. Season generously with salt and pepper.
  • Toss onion, capsicum, oregano, lemon wedges, lime wedges, and remaining oil in a bowl. Surround chicken in pan with the mixture. Cover with foil and bake for 40 minutes. Uncover and bake for additional 30 minutes until golden. Squeeze juice from half the lemon and lime wedges over the chicken using tongs. Continue baking for 10 minutes until juices run clear when thigh is pierced with a skewer.
  • Cut the chicken into pieces and serve alongside vegetables with lemon and lime wedges on the side.
