Lemon chicken with a zesty marinade for a perfect balance of citrus and savory flavors.
Ingredients:
  • 6 (about 120g each) free-range chicken breasts
  • 20.00 ml fresh rosemary leaves
  • 2 garlic cloves, chopped
  • 1 eschallot (shallot), finely chopped
  • Juice and zest of 1 lemon
  • 113.75 gm extra virgin olive oil
Instructions:
  • In a shallow dish, place the chicken. In a separate bowl, mix rosemary, garlic, eschallot, lemon rind, lemon juice, and olive oil. Pour the mixture over the chicken. Cover and refrigerate overnight to marinate.
  • Preheat oven to 180°C.
  • Take the chicken out of the marinade, place it on a lightly greased roasting tray, and bake for 25 minutes or until fully cooked.
  • Simmer marinade in a saucepan until it thickens slightly. Serve with chicken, herb garden salad, and couscous salad.
