Lemon Chicken

Peppery, buttery lemon chicken, perfect over rice for a tasty family dinner.
Ingredients:
3tablespoons olive oil
1 medium yellow onion, diced
3shallots, sliced
4clovesgarlic, sliced
0.5 stick unsalted butter, divided
4skinless, boneless chicken breasts, cut into bite-sized pieces
1pinch salt and ground black pepper to taste
3lemons, zested and juiced
1 (14.5 ounce) canchicken broth
1tablespooncornstarch
0.25 cupwater
Instructions:
In a deep skillet over medium heat, heat the olive oil until shimmering. Sauté the onion, shallots, and garlic until the onion turns translucent, approximately 5 minutes. Then, stir in half of the butter.
Season the chicken generously with salt and pepper while the onion mixture is cooking. Add the chicken to the skillet and coat it well. Drizzle with the zest and juice of 1 lemon and cook until chicken is no longer pink. Finish with more pepper and the rest of the lemon zest and juice.
Add the chicken broth and remaining butter to the pan. Stir well, cover, and allow to simmer until the chicken is thoroughly cooked, about 10 to 15 minutes.
Incorporate cornstarch with 1/4 cup water and blend into the skillet. Simmer gently until the sauce thickens, approximately 5 minutes.
