Whip up zesty lemon chicken topped with pistachios in 25 minutes. Serve with rice, salad, or veggies for a quick and flavorful meal. Only six ingredients needed!
Ingredients:
  • 8 boneless skinless chicken breast halves (2 1/2 pounds)
  • 1 teaspoon lemon pepper
  • 1 tablespoon vegetable oil
  • 3 tablespoons lemon juice
  • 1 teaspoon grated lemon peel
  • 1/4 cup chopped toasted pistachio nuts, if desired
  • Lemon slice, if desired
Instructions:
  • Pound each chicken breast half to 1/4-inch thickness between sheets of plastic wrap or waxed paper. Season both sides with lemon pepper.
  • In a large skillet, heat oil over medium-high heat. Cook chicken with lemon juice and lemon peel for 15 to 20 minutes, flipping the chicken once and stirring the juice mixture occasionally, until the chicken is no longer pink in the center of the thickest pieces.
  • Top the chicken with a flavorful mixture of juice, nuts, and lemon slices before serving.
