Cilantro, garlic, lime shrimp sautéed with salsa. Serve with tortillas or rice. Delicious!
Ingredients:
  • 1 red bell pepper, finely chopped
  • 1.5 pounds shrimp, tails removed
  • 1 bunch fresh cilantro, chopped, or to taste, divided
  • 0.25 cup olive oil
  • 0.5 yellow onion, chopped
  • 5 cloves garlic, chopped, or more to taste
  • 2 cups salsa
  • 0.75 cup white wine
  • 1 small red chile pepper, pureed
  • 1 teaspoon lemon juice, or to taste
  • 1 teaspoon lime juice, or to taste
Instructions:
  • Combine shrimp and half of the fresh cilantro in a mixing bowl.
  • In a skillet over medium heat, saute onion in olive oil until translucent (1-2 minutes). Add garlic and saute until browned (1-2 minutes).
  • Mix together salsa, red bell pepper, white wine, red chile pepper puree, lemon juice, and lime juice with the onion mixture. Bring to a boil, then simmer for 2 to 3 minutes. Stir in shrimp and cook until they are done, about 5 minutes. Finish by sprinkling with remaining cilantro and adjusting the flavor with more lemon or lime juice if desired.
