Zesty lime-garlic marinade for succulent roasted chicken drumsticks.
Ingredients:
  • 0.25 cup olive oil
  • 1 large lime, juiced, or more to taste
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley flakes
  • 0.5 teaspoon ground black pepper
  • 10 skinless chicken drumsticks
Instructions:
  • In a large resealable bag, mix together olive oil, lime juice, garlic powder, onion powder, chili powder, oregano, parsley, and pepper. Add chicken drumsticks, coat well with the marinade, remove air, and seal the bag. Refrigerate for at least 2 hours, or overnight for best results.
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • Prepare a baking sheet by lining it with aluminum foil. Take the drumsticks out of the marinade, gently shake off any excess, and place them on the prepared baking sheet. Dispose of any leftover marinade. Allow the chicken to come to room temperature while the oven is preheating.
  • Roast the chicken in the preheated oven for 25 minutes until golden brown. Flip and baste with juices, then continue cooking for another 10 to 15 minutes until the second side is browned. Check with an instant-read thermometer near the bone; it should read 165°F (74°C).
  • Cover the succulent chicken with a shiny layer of aluminum foil, allowing it to rest before indulging for approximately 5 minutes.
