2skinless, boneless chicken breast halves, cut into bite-size pieces
2tablespoons roastedgarlic
Freshly groundblack pepper to taste
2limes
2avocados, peeled, pitted, and sliced
2tablespoons choppedfresh parsley
Instructions:
Zest 2 limes and squeeze the juice from 1 lime. Keep them separated.
In a pot, mix 2 cups of water with Knorr® Rice SidesTM- Chicken Broccoli Rice, diced chicken, roasted garlic, black pepper, and lime zest. Bring to a boil over high heat, then lower the heat, cover, and simmer until most of the water is absorbed, approximately 10 minutes.
Garnish with avocado slices, fresh parsley, and a squeeze of fresh lime juice.
