One-pot chicken meal with zesty lime, creamy avocado, fresh parsley, and fragrant roasted garlic.
Ingredients:
  • 1 (5.5 ounce) box Knorr® Rice Sides™ - Chicken Broccoli
  • 2 skinless, boneless chicken breast halves, cut into bite-size pieces
  • 2 tablespoons roasted garlic
  • Freshly ground black pepper to taste
  • 2 limes
  • 2 avocados, peeled, pitted, and sliced
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Zest 2 limes and squeeze the juice from 1 lime. Keep them separated.
  • In a pot, mix 2 cups of water with Knorr® Rice SidesTM- Chicken Broccoli Rice, diced chicken, roasted garlic, black pepper, and lime zest. Bring to a boil over high heat, then lower the heat, cover, and simmer until most of the water is absorbed, approximately 10 minutes.
  • Garnish with avocado slices, fresh parsley, and a squeeze of fresh lime juice.
