Knorr's delicious casserole features tender chicken with flavorful veggies and seasoned rice.
Ingredients:
  • 1 pound boneless, skinless chicken thighs, cut into chunks
  • 1 medium onion, sliced into 1/2-inch thick pieces
  • 1 clove garlic, finely chopped
  • 0.25 cup sliced carrots
  • 3 medium zucchini and/or yellow squash, cut into thirds
  • 5 green onions, sliced into 2-inch pieces
  • 0.25 cup cherry tomatoes
  • 2 cups boiling water
  • 1 (5.6 ounce) package Knorr® Rice Sides™ - Chicken flavor, prepared according to package directions
Instructions:
  • Preheat the oven to 400°F (200°C).
  • If desired, season chicken with salt and pepper. In a large skillet, heat oil over medium-high heat and brown chicken. Add onion and garlic, cooking until onion is almost tender, about 4 minutes. Include carrots, zucchini, and green onion; continue to cook and stir for an additional 5 minutes.
  • In a 13x9-inch baking dish, mix Knorr rice sides with boiling water. Add vegetables and chicken, then cover the dish tightly with aluminum foil.
  • Bake until the chicken is cooked through and the rice is tender, approximately 30 minutes.
