Cheesy chicken and veggie casserole bakes to golden perfection in just 30 minutes - a delicious and speedy weeknight dinner option.
Ingredients:
  • 1.5 cups 2% milk
  • 0.25 cup all-purpose flour
  • 3 tablespoons Country Crock® Spread, divided
  • 2 cups cut-up cooked chicken breast
  • 4 cups vegetables such as broccoli florets and red bell peppers
  • 2.25 cups finely shredded low-fat Cheddar cheese, divided
  • 1 tablespoon onion powder
  • 0.25 cup panko bread crumbs
Instructions:
  • Preheat the oven to 425 degrees. In a large nonstick skillet, melt 2 tablespoons of Country Crock® Spread and saute the broccoli and red bell pepper until they're crisp-tender. In a large bowl, whisk together the milk and flour. Add the chicken, cooked vegetables, 2 cups of cheese, and onion powder, and toss everything to combine. Transfer the mixture into an 8-inch baking dish.
  • Mix the panko crumbs, 1 tablespoon of Spread, and 1/4 cup of cheese together in a small cup. Sprinkle the mixture over the casserole.
  • Bake until the top is golden brown and edges are bubbling, about 30-35 minutes.
