Curried Chicken and Broccoli Casserole

Irresistible curry chicken and broccoli casserole topped with melted Cheddar and crispy cornflakes.
Ingredients:
  • 1 bunch broccoli, cut into chunks - or more to taste
  • 2 (10.5 ounce) cans cream of chicken soup
  • 1 cup mayonnaise
  • 0.25 cup lemon juice
  • 1 teaspoon curry powder
  • salt and ground black pepper to taste
  • 1 (3 pound) cooked rotisserie chicken, meat removed from bones and chopped
  • 1 cup shredded Cheddar cheese
  • 1 cup crushed corn flakes cereal
  • 0.25 cup slivered almonds
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) while greasing a 9x13-inch baking dish with cooking spray.
  • Place broccoli in a microwave-safe dish with 2 tablespoons of water. Cover and microwave on high until broccoli is steaming and vibrant green, about 2 to 3 minutes.
  • Whisk together condensed soup, mayonnaise, lemon juice, curry powder, salt, and pepper until fully blended.
  • Place the broccoli at the bottom of the baking dish. Top with cooked chicken, pour soup mixture over, sprinkle with Cheddar cheese, crushed cornflakes, and almonds.
  • Bake without a cover in the oven until the casserole is bubbling, the cheese is melted, and the topping is golden brown, approximately 30 minutes.
