Elevate the canteen with a mouthwatering curried chicken and apple slaw sandwich.
Ingredients:
  • 375.00 ml roughly shredded cooked chicken
  • 2.50 gm mild curry powder
  • 61.88 gm whole-egg mayonnaise
  • 20.00 ml finely chopped fresh chives
  • 1 Granny Smith apple, halved, cored, cut into matchsticks
  • 187.50 ml finely shredded red cabbage
  • 1 small carrot, cut into long thin matchsticks
  • 18.20 gm extra virgin olive oil
  • 8 thick slices soy and linseed bread
  • 40.00 ml chopped fresh mint leaves
Instructions:
  • In a bowl, mix together chicken, curry powder, mayonnaise, chives, and half of the juice. Season with salt and pepper to taste.
  • In a bowl, mix together the apple, cabbage, carrot, oil, and remaining juice. Season with salt and pepper to taste.
  • Lay 1/2 of the bread slices on a cutting board. Evenly spread chicken mixture on top, followed by apple slaw and fresh mint. Cover with the remaining bread slices, then cut the sandwich in half before serving.
