Elevate your chicken burger with a zesty curried apple mayo and crispy bacon.
Ingredients:
  • 500g minced chicken
  • 155g breadcrumbs
  • 1 egg, lightly beaten
  • 2 green onions, finely chopped
  • 125g can corn kernels, drained
  • 4 rindless rashers bacon
  • 36.40 gm olive oil
  • 100g mixed baby lettuce
  • 4 hamburger buns, halved, toasted
  • 1 small red apple, cored, cut into 1cm dice
  • 82.50 gm egg mayonnaise
  • 7.00 gm mild curry paste
Instructions:
  • In a small bowl, combine all ingredients for the mayonnaise. Add a touch of water if the mixture is too thick.
  • In a bowl, combine chicken mince, breadcrumbs, egg, onions, and corn. Season with salt and pepper. Mix thoroughly. Shape into 4 large, 3cm-high patties and place them on a plate.
  • Start by heating a large non-stick frying pan over medium heat. Cook the bacon for 1 minute on each side or until it is light golden. Once done, drain the bacon on a paper towel-lined plate. Next, add oil to the pan and heat it over medium-high heat. Proceed by adding the chicken patties and cooking them for 5-7 minutes on each side until they are cooked through and nicely browned. When ready to serve, distribute the lettuce among the bottom halves of the buns, then layer with the patties, bacon, a dollop of curried apple mayonnaise, and the top halves of the buns. Enjoy your delicious meal!
