Elevate chicken salad with apples, dried cranberries, and a hint of tang, perfect for sandwiches or a light lettuce wrap.
Ingredients:
  • 2 cups cubed, cooked chicken
  • 1 unpeeled red apple, chopped
  • 0.75 cup dried cranberries
  • 0.5 cup thinly sliced celery
  • 0.25 cup chopped pecans
  • 2 tablespoons thinly sliced green onions
  • 0.75 cup mayonnaise
  • 2 teaspoons lime juice
  • 0.5 teaspoon curry powder
  • 12 slices bread
  • 12 lettuce leaves
Instructions:
  • In a bowl, toss together chicken, apple, cranberries, celery, pecans, and green onions. In a small bowl, combine mayonnaise, lime juice, and curry powder. Gently fold the mayonnaise mixture into the chicken mixture until everything is coated. Refrigerate until ready to serve.
  • Use a 3-inch heart-shaped cookie cutter to create fun-shaped bread slices. Layer each with a crisp lettuce leaf and delicious chicken salad on top.
