Curried chicken

Ingredients:
  • 500g chicken breast
  • 1 large onion, sliced in wedges (eighths)
  • 4 celery sticks, chopped
  • 1 carrot, julienned
  • 60.00 gm butter
  • 10.00 gm Curry Powder
  • 1 can diced tomatoes, drained
  • 80.00 ml plain flour
  • 386.25 gm milk
  • 1 chicken style stock cube
Instructions:
  • Simmer chicken in water until just cooked, about 10-15 minutes. Save 1 cup of the cooking water for the stock cube.
  • Sauté onions, celery, and carrot in butter in a heated electric fry pan. Stir in curry powder, followed by tomatoes. Reduce heat to medium-low and mix in flour until fully incorporated.
  • Mix together the chicken water, stock cube, and milk. Gently pour the mixture into a fry pan while stirring continuously.
  • After dicing the chicken into bite-sized pieces, gently fold it into the fragrant curry sauce until fully coated.
  • Plate the dish on a fluffy bed of aromatic jasmine rice.
