Curried Chicken Pomegranate

Indulge in a tangy pomegranate and creamy Yoplait® yogurt baked chicken dish for a delicious dinner.
Ingredients:
  • 1/2 cup Yoplait® plain fat-free yogurt
  • 1/2 to 1 teaspoon curry powder
  • 1/4 teaspoon ground ginger
  • 1/2 cup pomegranate seeds*
  • 1 large clove garlic, finely chopped
  • 2 skinless boneless chicken breast halves (about 1/2 pound)
  • 1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried mint leaves
Instructions:
  • Preheat the oven to 350°. Grease an 8x8x2-inch square baking dish with nonstick cooking spray. In a medium bowl, combine yogurt, curry powder, ginger, pomegranate seeds, and garlic. Coat the chicken with the yogurt mixture and place it in the baking dish. Spread the rest of the yogurt mixture over the chicken. Bake for 35 to 45 minutes until the juices run clear. Garnish with mint before serving.
