Spiced chicken sandwiches with refreshing fruit and mint flavors.
Ingredients:
  • 85g (1/3 cup) whole-egg mayonnaise
  • 7.00 gm korma curry paste
  • 1/2 tsp Lime Pickle
  • 5.00 gm mango chutney
  • 155g (1 1/4 cups) shredded cooked chicken
  • 20.00 ml slivered almonds, toasted
  • 20.00 ml currants
  • 6 slices fresh wholemeal bread, crusts removed
  • Whole-egg mayonnaise, extra
  • 9 large fresh mint leaves
Instructions:
  • In a bowl, mix together mayonnaise, curry paste, pickle, and chutney. Add chicken, almonds, and currants. Stir until everything is well combined.
  • Spread a generous layer of mayonnaise on the bread. Evenly distribute the chicken mixture on half of the bread slices. Add fresh mint leaves and cover with the remaining bread slices. Cut the sandwiches in half and arrange beautifully on a serving platter.
