Creamy cheddar and soup elevate this simple chicken and broccoli casserole, ready in just an hour.
Ingredients:
  • 1.5 cups water
  • 1.5 cups uncooked instant rice
  • 2 large cooked chicken breasts, cut into 1-inch cubes
  • 1 head broccoli, cut into florets
  • 2 (10.5 ounce) cans condensed cream of broccoli soup
  • 1 cup milk
  • 1 tablespoon Italian-seasoned bread crumbs
  • 1 teaspoon garlic powder
  • 0.125 teaspoon ground black pepper
  • 1 (8 ounce) package shredded Cheddar cheese
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a saucepan, bring water to a boil. Add rice, stir well, cover, and remove from the heat. Allow to sit until water is absorbed, approximately 5 minutes. Fluff the rice with a fork.
  • Combine rice with savory chicken and tender broccoli in a casserole dish.
  • Mix together condensed soup, milk, bread crumbs, garlic powder, and pepper until fully combined in a bowl. Pour the mixture into a casserole dish, stir in half of the Cheddar cheese, then sprinkle the rest of the Cheddar on top.
  • Place in the oven, uncovered, and bake until hot and bubbly, approximately 30 minutes.
