Cheesy broccoli and rice stuffed chicken breasts - like a warm, comforting bowl of soup.
Ingredients:
  • nonstick cooking spray
  • 1.5 cups finely chopped broccoli
  • 4 ounces sharp Cheddar cheese, cubed
  • 0.5 cup cooked white rice
  • 0.25 cup chopped onion
  • 1 teaspoon salt
  • 0.5 teaspoon garlic granules
  • 4 (6 ounce) skinless, boneless chicken breasts
  • 1 tablespoon tropical poultry rub (such as Savory Spice® Gold Coast Poultry Rub)
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and generously coat an 8-inch square casserole dish with cooking spray.
  • In a medium bowl, mix together broccoli, Cheddar cheese, rice, onion, salt, and garlic granules until well combined.
  • Using a sharp knife, create a pocket in each chicken breast. Fill each breast with broccoli-cheese mixture, place them in the casserole dish, then sprinkle with poultry rub. Cover the dish with aluminum foil.
  • Bake in the preheated oven for 25 minutes, then remove foil and continue to bake for an additional 10 minutes until chicken is fully cooked and reaches an internal temperature of at least 165°F (74°C) when tested with an instant-read thermometer.
