Cheesy broccoli-stuffed chicken, a cozy comfort meal for chilly days!
Ingredients:
  • 1.5 tablespoons all-purpose flour
  • 0.5 teaspoon paprika
  • 3 thin chicken breast cutlets
  • salt and ground black pepper to taste
  • 3 wedges spreadable garlic and herb cheese (such as The Laughing Cow®), softened
  • 1 cup frozen broccoli florets, thawed and finely chopped
  • 0.25 cup shredded sharp Cheddar cheese
  • toothpicks
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) while you mix flour and paprika in a shallow bowl.
  • Lay chicken cutlets between plastic wrap and gently pound them to 1/4 inch thickness. Season both sides generously with salt and pepper.
  • For a delicious twist, blend spreadable cheese in a bowl until smooth. Mix in broccoli and Cheddar until fully incorporated. Spread this flavorful mixture onto each cutlet, roll them up around the filling, and secure with toothpicks. Finally, coat the cutlets in the flour mixture.
  • In a hot oven-safe skillet with oil, sear chicken until golden brown on both sides, around 2-3 minutes per side.
  • Place the skillet in the preheated oven and bake for 14-16 minutes, or until the chicken is fully cooked and the juices run clear. Ensure the chicken reaches an internal temperature of 165 degrees F (74 degrees C). Remember to remove the toothpicks before serving.
