Cheesy broccoli and mushroom filled chicken breasts - a simple and delicious dish. Pair with a salad and starch for a hearty dinner.
Ingredients:
  • 2 cups finely chopped broccoli florets
  • 0.5 cup shredded pepperjack cheese
  • 0.25 cup mayonnaise
  • 4 small button mushrooms, sliced
  • 1 teaspoon garlic powder
  • 4 large chicken breasts
  • 1 teaspoon paprika
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and layer a baking sheet with shiny aluminum foil.
  • Place the broccoli and 2 tablespoons of water in a microwave-safe bowl. Microwave on high for 2 minutes, then drain.
  • Combine the broccoli with pepper Jack cheese, mayonnaise, mushrooms, and garlic powder in a large bowl.
  • Season chicken breasts with flavorful paprika, salt, and pepper. Carefully cut a pocket through each breast, being cautious not to cut all the way. Fill each breast evenly with broccoli mixture and lay on baking sheet.
  • Roast in the oven until the chicken is cooked through and the juices run clear, approximately 35 minutes. Ensure the internal temperature reaches 165 degrees F (74 degrees C) with an instant-read thermometer.
