Cheesy quesadillas stuffed with broccoli, carrots, bell peppers, and mushrooms.
Ingredients:
  • 1 zucchini, cubed
  • 1 head fresh broccoli, chopped
  • 1 red bell pepper, chopped
  • 1 carrot, chopped
  • 1 yellow onion, chopped
  • 4 small button mushrooms, chopped
  • 4 (10 inch) flour tortillas
  • 0.5 cup shredded sharp Cheddar cheese
  • 0.5 cup shredded Monterey Jack cheese
Instructions:
  • Preheat the oven on broil setting and cover a baking sheet with aluminum foil.
  • Steam a colorful mix of zucchini, broccoli, bell pepper, carrot, onion, and mushrooms over boiling water until just tender, approximately 2 to 6 minutes. Drain.
  • Lay two tortillas on the baking sheet. Stack cheddar cheese and vegetables on top, followed by Monterey jack cheese. Finish with another tortilla on each stack.
  • Place tortillas under the broiler until lightly browned, then carefully flip and brown the other side.
