Helen’s red lentil & cauliflower smash with rice

Ingredients:
  • 1 small carrot
  • 1 small sweet potato (150g)
  • ¼ of an eating apple
  • 40 g red lentils
  • 6 cauliflower florets (250g)
Instructions:
  • Peel and finely dice the carrot and sweet potato, then peel, core, and roughly chop the apple. In a medium pan over medium heat, combine the diced carrot, sweet potato, apple, lentils, and 200ml water. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes. Add the cauliflower and a splash of water if needed. Continue to cook for 10 minutes until tender. Mash until smooth with soft lumps and let it cool before serving. Enjoy with freshly cooked white rice.
