Helen’s chickpea & spiced spinach smash with sweet potato

Ingredients:
  • 1 small onion
  • 1 clove of garlic
  • 1 large sweet potato (300g)
  • 1 teaspoon olive oil
  • ½ teaspoon turmeric
  • ½ teaspoon garam masala
  • 1 x 400 g tin of chickpeas in water
  • 200 g fresh or frozen spinach
Instructions:
  • Peel and finely chop the onion and garlic, then peel and dice the sweet potato. Boil the sweet potato until tender, then drain and mash. Heat oil in a pan, add onion, cook until softened, then add garlic, turmeric, and garam masala and cook. Drain chickpeas and add them to the pan with spinach. Cook covered until spinach wilts. Mash mixture with a potato masher until smooth with lumps. Cool and serve with mashed sweet potato. Enjoy cooked red pepper as a finger food on the side.
