Helen’s ratatouille with mash

Ingredients:
  • ½ a small onion
  • 1 small courgette
  • ¼ of a small aubergine
  • ¼ of a small green or red pepper
  • 1 medium tomato
  • ½ tablespoon olive oil
  • 2 tablespoons tomato purée
  • 1 large potato (400g)
  • 1 tablespoon milk
Instructions:
  • Finely chop the onion. Dice the courgette, aubergine, pepper, and tomato. Heat oil in a large pan over medium heat, cook the onion until softened. Add the rest of the diced vegetables, 120ml water, and tomato purée. Bring to a boil, then simmer on low for 20 minutes until the vegetables are tender and the sauce thickens. Dice and cook the potato until soft, then mash with milk. Allow both the mash and ratatouille to cool before serving.
