Helen’s sweet potato & red pepper stew

Ingredients:
  • 1 small sweet potato (150g)
  • 1 small onion
  • 1 carrot
  • 1 small red pepper
  • 3 sprigs of fresh flat-leaf parsley
  • ½ tablespoon olive oil
  • 1 x 400 g tin of chopped tomatoes
  • 60 g frozen peas
Instructions:
  • Peel and dice the sweet potato, then boil for 15 minutes until tender and drain. Chop the onion, carrot, pepper, and parsley. In a pan, sauté the onion until soft. Add carrot and pepper, cook for 5 minutes. Pour in tomatoes and ½ tin of water. Cook covered for 25 minutes until vegetables are soft. Add sweet potato, peas, and parsley, cook for 1 minute until warm. Cool, then chop or mash as desired. For more on complementary feeding stages, click here.
