Ultimate quesadillas

Irresistible blend of gooey cheese and spicy-sweet chilies.
Ingredients:
  • 1 yellow pepper
  • 1 red pepper
  • 1 red chilli
  • ½ a bunch of fresh coriander (15g)
  • 120 g Cheddar cheese
  • 4 large flour tortillas
  • ½ red chilli
  • 227 g tinned pineapple rings in juice
  • olive oil
  • ½ teaspoon black mustard seeds
  • ½ lime
  • 2 ripe avocados
  • ½ red onion
  • 2 ripe tomatoes
  • ½ bunch of fresh coriander
  • 2 limes
  • 250 g cottage cheese
Instructions:
  • For the salsa, finely chop the deseeded chili and pineapple rings, reserving the juice. Heat a small pan with oil, mustard seeds, and chili until fragrant. Add pineapple, juice, black pepper, and cook for 5 minutes until thickened. Stir in lime juice and transfer to a serving bowl. For the guacamole, scoop avocado flesh into a bowl and mix with grated onion, chopped chili, tomatoes, coriander, lime juice, salt, and pepper. Use a masher or blender to combine well and set aside. For the cottage cheese dip, mix cottage cheese with lime juice, salt, and pepper in a bowl. For the filling, chop deseeded chili and peppers, grate Cheddar cheese, and mix with coriander leaves. To assemble, spread the filling mixture onto one tortilla, top with another tortilla, and cook each side in a non-stick pan until golden. Cut into quarters and serve with the sides.
