Vegetable-Stuffed Manicotti

Elevate your Italian dinner with cheesy stuffed pasta featuring broccoli and mushrooms.
Ingredients:
  • 8 uncooked manicotti
  • 1 cup julienne-cut (2x1/4x1/4-inch) zucchini
  • 1 cup Frozen Broccoli Cuts, thawed, large pieces cut up
  • 1 (4.5-oz.) jar sliced mushrooms, drained
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped red or green bell pepper
  • 1/2 teaspoon dried basil leaves
  • 1 1/2 cups spaghetti sauce
  • 3 oz. (3/4 cup) shredded mozzarella cheese
Instructions:
  • Cook the manicotti according to package instructions. Once cooked, drain and rinse with cold water to cool before draining well.
  • Preheat the oven to 400°F. Mix all filling ingredients in a medium bowl until well combined. Stuff each cooked manicotti with the vegetable mixture.
  • Spread 1/2 cup of spaghetti sauce in a 12x8-inch (2-quart) baking dish. Fill the manicotti and place them on top of the sauce. Pour the remaining 1 cup of spaghetti sauce over the manicotti and cover the dish tightly with foil.
  • Bake at 400°F for 20 to 25 minutes until bubbly. Uncover dish, sprinkle with cheese, and bake another 5 to 8 minutes until melted.
