Sheet pan fajitas: Juicy flank steak, onions, and peppers perfectly cooked for a delicious family dinner with minimal mess.
Ingredients:
  • 2 medium bell peppers, sliced
  • 1 medium onion, sliced
  • 1 tablespoon olive oil, divided
  • 1.5 teaspoons salt, divided
  • 1 teaspoon chili powder, divided
  • 0.75 teaspoon garlic powder
  • 0.75 teaspoon ground black pepper, divided
  • 0.5 teaspoon ground cumin, divided
  • 1 (1 1/2-pound) flank steak
  • 2 medium limes, quartered
  • 6 (6 inch) flour tortillas, warmed
Instructions:
  • Preheat your oven to 450 degrees F (230 degrees C) and prepare a sheet pan by lining it with foil.
  • Toss bell peppers, onion, 2 teaspoons oil, 3/4 teaspoon salt, 1/2 teaspoon chili powder, garlic powder, 1/4 teaspoon pepper, and 1/4 teaspoon cumin together, ensuring the veggies are well coated. Arrange the mixture on the pan with space left in the center.
  • Lay the flank steak in the center of the pan and drizzle it with the remaining 1 teaspoon of oil. Season the steak with the remaining salt, chili powder, pepper, and cumin, ensuring it's evenly coated.
  • Roast in the preheated oven until vegetables are tender and caramelized, and steak is cooked to your liking, about 12 to 14 minutes. Use an instant-read thermometer to check the steak - it should register 140 degrees F (60 degrees C) for medium doneness.
  • Place the steak on a cutting board and let it rest for 5 to 10 minutes.
  • Slice the steak thinly and place it back on the sheet pan. Add lime wedges and serve with tortillas.
