Easy Sheet-Pan Beef Fajitas

Quick and easy oven-baked beef fajitas with seasoned sliced beef, onions, and peppers roasted on a sheet pan for a delicious weeknight dinner with minimal cleanup.
Ingredients:
  • 2 cups sliced onion (1/4-inch slices)
  • 1 medium red or yellow bell pepper, cut into 1/4-inch strips
  • 2 tablespoons vegetable oil
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1 lb boneless sirloin steak
  • 8 tortillas from 1 package (8.2 oz) Old El Paso™ Flour Tortillas for Soft Tacos and Fajitas (10 count)
  • Sour cream, thick & chunky salsa, chopped fresh cilantro, if desired

Instructions:
  • 1. Preheat the oven to 400°F and generously spray an 18x13-inch rimmed sheet pan with cooking spray. 2. Spread the onions and bell peppers evenly on the sheet pan. 3. Drizzle 1 tablespoon of oil and sprinkle 2 tablespoons of taco seasoning over the vegetables. Gently stir to coat them. 4. Bake for 15 minutes, then give the vegetables a good stir.
  • Cut the steak into 1/4-inch strips, then place them in a small bowl. Mix in the remaining 1 tablespoon of oil and seasoning until well coated. Add the steak to the pan with vegetables and bake for 7 to 9 minutes until the beef is cooked through and the vegetables are tender.
  • Warm tortillas as per package instructions. Transfer steak mixture to serving platter using tongs. If serving on a sheet pan, ensure excess liquid is drained before serving.
  • Place a generous amount of steak and veggies onto each tortilla, then serve with the remaining ingredients.
