Mexican-style steak

Mexican-inspired juicy steak with fresh salsa and rich satay-style sauce. Ask for thick double steak for charred crust and juicy inside. Render steak fat for retro potato side. Enjoy!
Ingredients:
  • ½ teaspoon cumin seeds
  • 1 x 3cm thick sirloin steak (300g)
  • 1 Maris Piper potato (300g)
  • 3 fresh green chillies
  • olive oil
  • ½ a bunch of fresh coriander (15g)
  • ½ a bunch of fresh mint (15g)
  • ½ a clove of garlic
  • 1 fresh red chilli
  • 2 spring onions
  • 1 ripe tomato on the vine
  • 1 lime
  • 50 g unsalted peanuts
  • 25 g sesame seeds
  • 1 sprig of fresh thyme
  • ½ teaspoon dried oregano
  • ½ a dried smoked chipotle chilli
  • 1 tablespoon tequila
  • 1-2 limes
  • ½ a fresh green chilli
Instructions:
  • - Preheat the oven to 180°C/350°F/gas 4. Let the steak come to room temperature. Make the salsa by chopping coriander, mint, garlic, chilli, spring onions, and tomato finely. Mix with lime juice, olive oil, salt, and pepper. For the peanut sauce, toast nuts, sesame seeds, cumin seeds, garlic, thyme, oregano, and chipotle chilli in a pan. Blend with water, tequila, lime juice, fresh chilli, salt, and pepper until smooth. Cook potatoes in a crinkle-cut shape. Slice the steak, season, and cook to your liking. Serve steak on a platter with peanut sauce, salsa, crispy potatoes, and coriander. Enjoy!
